Instructions

1.Preheat the oven to 425 degrees F.

3.Spread the onions out on a baking sheet and roast until they are caramelized and tender, about 20-25 minutes.

5.Once the onions are finished roasting, remove them from the oven and let them cool for a few minutes.
6.In a large salad bowl, combine the roasted onions, radicchio, red leaf lettuce, grape tomatoes, and finely chopped fresh parsley.
7.Toss the salad together until all of the ingredients are well combined.
