Ingredients

2 lbs small squid , cleaned , reserving tentacles and wings
1/2 lb shrimp , peeled and deveined
4 medium onions , divided
4 cloves garlic , divided
1 red pepper , divided
1/2 green pepper , divided
2 cups tomato sauce , divided
2 packets squid ink
6 tablespoons olive oil , divided , approximate
1/4 cup chopped parsley
1 cup white wine
2 -3 tablespoons breadcrumbs , to taste

This dish features tender and succulent squid stuffed with a rich shrimp and breadcrumb filling, all cooked in a savory broth of squid ink, onions, garlic, and pepper. Instructions

1.Chop half of the onions, red and green peppers, and 3 garlic cloves finely.
2.In a sauté pan, sauté them in 3 tablespoons of olive oil until opaque, about 10 minutes.
3.Add shrimp and sauté for 1 minute. Remove from heat, let cool and chop.
4.Add chopped parsley, shrimp-onion mixture, breadcrumbs, salt, and wine to a mixing bowl, and mix in a food processor.
5.Stuff each squid about 2/3 full. Do not overfill as they will expand as they cook.
6.In a pot, sauté the remaining onions and garlic cloves in 3 tablespoons of olive oil until soft, about 10 minutes.
7.Add the remaining red and green peppers and tomatoes; sauté until soft.
8.Add the remaining cup of tomato sauce and 1/2 cup water and bring to a simmer.
9.Add the ink packets, mixing well until it is dissolved.
10.Add the stuffed squid gently into the sauce, cover and cook 25-30 minutes on medium heat, turning the squids over gently.
11.Turn off the heat and let them rest for at least 10 minutes.
12.Serve hot, with crusty bread, or rice.
