Instructions

1.Preheat oven to 350°F.
2.In a heavy saucepan, cook 1/2 cup sugar and lemon juice over medium heat, stirring occasionally with a fork, until sugar is melted.
3.Continue cooking, swirling the pan occasionally until mixture turns a deep golden caramel color. Quickly pour the caramel into a 9-inch round cake pan, tilting to coat bottom and sides. Set aside.
4.Scald milk in a medium saucepan, stirring constantly. Remove from heat.
5.Beat eggs in a bowl until light and frothy.
6.Beat in remaining 1/3 cup sugar, rum, vanilla, and cardamom until blended.
7.Beat in pureed bananas, then hot milk.
8.Pour the mixture into the prepared pan and smooth top with a spatula.
9.Make a water bath: place the pan in a larger pan (a roasting pan works well) and add hot water until it reaches halfway up the sides of the baking pan.
10.Bake for about 45 minutes, until the flan is set, a knife blade inserted in the center comes out clean, and the top is golden brown.
11.Carefully remove the flan from the water bath and place on a wire rack to cool.
12.Refrigerate until cold, then run a knife around the edges of the pan and invert onto a serving plate.
