Instructions

.Preheat the oven to 400°F.
.In a large, oven-safe skillet, heat 3 tbsp olive oil over medium heat and cook the chorizo sausage until browned and crispy. Remove with a slotted spoon and set aside.
.Add the remaining 2 tbsp olive oil to the skillet and add the potatoes and onions. Season with salt and pepper and cook until the potatoes are tender and the onions are translucent, stirring occasionally.
.In a large bowl, beat the eggs with the parsley and season with salt and pepper to taste.
.Pour the egg mixture into the skillet and swirl to evenly distribute the ingredients. Cook over medium heat for 5-7 minutes, or until the bottom is set and the top is still slightly runny.
.Sprinkle the grated cheese over the top of the tortilla and transfer the skillet to the preheated oven. Bake for 10-12 minutes, or until the egg is cooked through and the cheese is melted and golden.
.Remove from the oven and let cool for a few minutes before slicing and serving. Garnish with extra chopped parsley, if desired.
