Ingredients

1 1/2 lbs dried salt cod fish ( bacalao )
4 medium potatoes , sliced thin
salt , for potato , to taste
freshly ground coarse black pepper , to taste ( for potatoes )
crushed red pepper flakes , to taste ( for potatoes )
freshly grated asiago cheese , to taste ( optional )
2 large yellow onions , sliced
1 green bell pepper , sliced in rings
1 red bell pepper , sliced in rings
4 garlic cloves , peeled and minced
1/2 cup water
1/2 cup white wine
1/3 cup olive oil
2 tablespoons lime juice
1/2 - 3/4 cup chunky tomato sauce
1 -2 dash Tabasco sauce ( a dash or two )

Instructions

1.Preheat oven to 375°F (180°C).
2.In a bowl, cover the dried salt cod with cold water and soak overnight, changing the water a few times.

4.Slice the potatoes and season lightly with salt, freshly ground coarse black pepper, and crushed red pepper flakes.
5.Add the freshly grated asiago cheese to the potatoes.
6.In a large baking dish, layer half of the sliced potatoes.
7.Top with all of the fish.
8.Layer the onions and bell peppers over the fish.
9.Add all of the minced garlic.
10.Top everything off with the remaining sliced potatoes.
11.Season again with salt, freshly ground coarse black pepper, and crushed red pepper flakes.
12.Combine the water, white wine, olive oil, lime juice, and chunky tomato sauce.
13.Pour the mixture over the top of the dish.
14.Add a couple of dashes of Tabasco sauce.
15.Cover the baking dish with foil.
16.Bake for 1 hour.
17.Remove the foil and continue to bake for an additional 30 minutes, or until the potatoes are cooked and the top is golden and crispy.
