5 slices French bread
3 teaspoons red wine vinegar

1 hard-boiled egg , per person
1 strip bacon , per person

Salmorejo Sevillano is a traditional cold soup from the Andalusian region of Spain. Similar in texture to gazpacho, it's made with ripe tomatoes, bread, garlic, olive oil, and vinegar. The soup is typically served as a starter, accompanied by slices of hard-boiled egg and crispy bacon. Instructions

1.Cut the tomatoes into quarters and remove the stem and seeds. Place them in a blender.
2.Soak the French bread in water for a minute. Squeeze out the excess water and add it to the blender.
3.Add the red wine vinegar, salt, and garlic clove to the blender. Blend all the ingredients until smooth.
4.With the blender running, slowly add dark olive oil until the soup becomes creamy. Transfer the soup to a bowl and refrigerate for at least two hours.
5.To serve, chop the hard-boiled egg and bacon into small pieces. Ladle the soup into bowls and garnish with the chopped egg and bacon. Drizzle with olive oil if desired.
