Ingredients

20 large raw shrimp ( in the shell ) or 4 -5 rock lobster tail
375 ml champagne or 375 ml dry white wine
1/2 teaspoon salt
1 pinch cayenne pepper
4 egg yolks
1 teaspoon cornstarch
4 tablespoons butter
1 cup light cream
1 teaspoon paprika

Instructions
