12 ounces chorizo sausage , removed from casings

Instructions

1.Heat up a cast iron skillet or non-stick pan over medium-high heat

3.Place two tortillas (oiled side down) in the heated pan

5.Top each quesadilla with the remaining tortillas (oiled side up)
6.Cook for 2-3 minutes on each side or until the cheese has melted and the tortillas are crispy
