Pestiños Andaluces, also known as Andalusian Crullers, are a popular pastry in the Andalusian region of Spain. These diamond-shaped, deep-fried treats are traditionally served during the holiday season, particularly during Christmas. They are sweetened with a sugar syrup and anise-flavored liqueur, which provides a distinct flavor that sets them apart from other pastries. Pestiños Andaluces can be enjoyed on their own, with hot drinks, or as a sweet addition to any meal.

Instructions

1.In a bowl, mix together the lemon zest, lemon juice, milk, olive oil, cinnamon, salt and anise liqueur into one smooth mixture.
2.Add the flour, little by little, while continuously mixing with your hands until the dough is hard and not so sticky anymore.
3.Place the dough on a clean, floured surface and knead it for a couple of minutes until smooth. Cover the dough with a towel and let it sit for at least 30 minutes.
4.Preheat the olive oil in a pot over medium-high heat.
5.Roll the dough with a rolling pin to around 3mm thick. Cut the dough into strips around 10 x 4cm.
6.Fry the strips in batches, rotating them continuously to brown on all sides while cooking.
7.Use a slotted spoon to remove the crullers and place them on a plate with a paper towel to remove excessive olive oil.
8.Mix the sugar and water in a pot on medium-high heat. Stir occasionally until you have a thick syrup.
9.Use a brush to coat the crullers with the syrup and sprinkle them with sugar before serving.

They should be enjoyed in moderation as part of a balanced diet.

HEALTH & BENEFITS

While these crullers may not offer significant nutritional benefits, the lemon zest in the recipe is a rich source of vitamin C and antioxidants. Additionally, the cinnamon used has been linked to regulating blood sugar levels, while the olive oil in the recipe can provide healthy fats.
