Ingredients

4 medium zucchini
1 medium onion , minced
1 can roasted red peppers , chopped
1/2 green pepper , chopped
2 garlic cloves
1 egg , beaten

2 tablespoons olive oil
8 slices cheese ( any kind really , we use Gouda or Gruyere , though this really is a matter of personal preference )

Instructions
