4 lbs chicken
2 tablespoons butter , softened
2 teaspoons dried tarragon
1 1/2 cups chicken broth
1 tablespoon cornstarch
1 tablespoon olive oil
1 green pepper , julienned
1 red pepper , julienned
1 onion , sliced
1 cup ham , julienned

Instructions

1.Season chicken with tarragon and set aside. Mix chicken broth with cornstarch until cornstarch has been dissolved and set aside.
2.In a large skillet, heat olive oil and sauté green pepper, red pepper, and onion until tender, about 10 minutes. Remove vegetables from skillet and set aside.
3.In the same skillet, heat butter over medium heat. Place the chicken in the skillet and cook until lightly browned on each side, about 5 minutes.
4.Add veggies and ham to the skillet with the chicken and stir in chicken broth mixture. Bring to a boil and reduce heat to low, cover, and cook until chicken is tender and fully cooked, about 45 minutes.
