Ingredients

2 heads garlic ( or even more )
1 large Spanish onion , cut pole to pole then sliced
2 medium green peppers , cut into strips
1 jar pimientos ( Not drained )
1 package yellow rice mix with saffron
1/4 - 1/3 cup frozen peas
dry white wine
4 -5 lbs chicken thighs , legs or 4 -5 lbs chicken quarters
flour
oil ( for frying )
salt and pepper

Instructions

1.Preheat oven to 350°F.
2.Peel garlic, puree in food processor.
3.Saute garlic and onion in 3 tbls oil until onion is limp. Add peppers and pimiento with juice. Cook 5 minutes.
4.In a large casserole or Dutch Oven, spread uncooked rice.
5.Layer peas, then pepper/onion mixture over rice.
6.Pour enough water over mixture to just cover everything.
7.Salt and pepper chicken pieces and dredge lightly in flour. Brown on both sides in extra hot oil.
8.Layer chicken over rice mixture.
9.With a fork mix about 2 tbls oil with about 3 tbls wine and pour over chicken and rice. Mix remainder with water to make about 1 ^ 1/2 cups of liquid and pour over everything. Stir gently.
10.Bake uncovered for 45 minutes to an 1 hour or until all liquid is absorbed and chicken is cooked through.
