Ingredients

1 large cauliflower
2 tablespoons olive oil
1 onion , diced
1 red bell pepper , diced ( save � cup for the finishing sauce , below )
1 oranges or 1 yellow bell pepper , diced
4 garlic cloves , minced
1 teaspoon paprika
2 pinches saffron threads or 1 teaspoon turmeric
1/2 lemon juice , and zest
1/4 cup dry white wine
2 spanish chorizo sausages , sliced
1/2 lb shrimp , deveined ( and peeled if desired )
1/4 cup parsley , chopped

Instructions

1.Break the head of the cauliflower into small florets and place them in a food processor.
2.Process the cauliflower until it has a rice-like consistency, then set it aside.
3.Heat the olive oil in a large skillet over medium heat, then add the onion and bell peppers (except for 1/4 cup red bell pepper).
4.Cook for 3-5 minutes until the vegetables are softened and fragrant.
5.Add in the garlic, paprika, saffron or turmeric, lemon juice and zest, stirring for a minute or two until aromatic.
6.Pour the white wine into the skillet and bring it to a gentle boil.
7.Add the sliced chorizo sausages, and cook for 5-7 minutes or until it's well cooked.
8.Add the shrimp and let it cook for 3-5 minutes until no longer translucent.
9.Stir in the cauliflower rice and 1/4 cup of remaining bell pepper. Cook for around 5-7 minutes until the cauliflower rice is tender.
10.Garnish with parsley and serve hot.
