1 can smoked mussels , drained
2 cups cooked white rice
1 cup Italian seasoned breadcrumbs
1/2 cup chopped flat leaf parsley
1/4 cup green olives ( sliced or chopped ) or 1/4 cup black olives ( sliced or chopped )
2 tablespoons lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
2 eggs

Instructions
