Ingredients

1 kg roma tomato , seeded and chopped
4 tablespoons olive oil
4 chicken breast fillets
1 large onion , halved then sliced
2 -3 garlic cloves , finely minced
1 red bell pepper , seeded and thinly sliced
150 ml dry sherry ( about 2/3 cup )
6 -8 saffron strands , soaked in 2 tsp boiling water
1 bay leaf
1 cinnamon stick , short
salt and pepper
1 tablespoon olive oil
2 tablespoons breadcrumbs
1/2 tablespoon paprika , smoky ( I use pimenton )
1 tablespoon almonds ( sliced or chopped )
Catalan Chicken is a traditional Spanish dish that originated in the Catalonia region. This hearty and flavorful recipe combines juicy chicken breast with aromatic spices like saffron and cinnamon. The roasted tomatoes in the dish add a touch of sweetness and acidity, complementing the savory flavors of the chicken. Instructions

1.Preheat the oven to 375 degrees F (190 degrees C)
2.Place the tomatoes in a baking dish and drizzle with 2 tablespoons of olive oil. Roast until the tomatoes are softened and lightly caramelized, about 30 minutes.
3.Season the chicken with salt and pepper. Heat the remaining 2 tablespoons of olive oil in a large ovenproof skillet over medium-high heat. Cook the chicken until browned, about 6 minutes per side. Transfer the chicken to a plate.
4.Add the onion and garlic to the skillet and cook until softened, about 5 minutes. Add the bell pepper and sherry and simmer until the sherry has reduced by half, about 5 minutes. Add the saffron, bay leaf, cinnamon stick, and roasted tomatoes to the skillet and stir to combine.
5.Nestle the chicken into the tomato mixture and drizzle with the remaining tablespoon of olive oil. Combine the breadcrumbs, paprika, and almonds in a small bowl and sprinkle the mixture evenly over the chicken.
6.Transfer the skillet to the oven and bake until the chicken is cooked through and the topping is golden brown, about 25 minutes. Serve hot.
