Ingredients

300 ml whole milk
1 generous pinch saffron thread
4 large egg yolks
80 g caster sugar
2 tablespoons honey , flowing liquid type
300 ml double cream

Instructions

1.In a small saucepan, heat up the milk and saffron thread over medium heat until steaming hot. Turn off heat and let stand for 30 minutes to infuse the saffron flavour.
2.In a large bowl, whisk the egg yolks and caster sugar until pale yellow in colour and lightened in texture. Pour in the honey, whisking continuously until well combined.
3.Pour the saffron-infused milk through a strainer into the egg mixture, whisking quickly. Return the mixture to the saucepan and cook over low heat, stirring continuously, until the mixture coats the back of a spoon.
4.Pour the mixture into a bowl and leave to cool down to room temperature. Once cooled, stir in the double cream, whisking until well combined. Cover with cling film and chill in the fridge for at least 2 hours, or overnight.
5.Churn the mixture in an ice cream maker according to the manufacturer’s instructions. Once churned, transfer to a freezer-safe container, cover with cling film, and freeze for at least 2 hours before serving.
