Garlic Mayo (Ali Oli) is a popular condiment in Mediterranean and Latin American cuisine. It is traditionally made with a mortar and pestle, but this blender method produces a smoother and more consistent mayo. The red wine vinegar adds a tangy note that balances the richness of the mayo.

Instructions

2.Blend the ingredients on high speed until well combined.
3.Very slowly add the red wine vinegar while continuing to blend the mixture.
4.Gradually add the sunflower oil in a slow stream, with the blender still running, until the mixture forms a thick and creamy mayo.
5.Taste the garlic mayo and adjust the seasoning as needed.
