12 chicken thighs , trimmed of fat , rinsed , and patted dry
2 large lemons , each cut into six 1/4-inch rounds
1 bunch fresh rosemary , snipped into twelve 2-inch pieces
1 bunch fresh thyme , snipped into twelve 2-inch pieces
12 sage leaves
freshly ground black pepper

Instructions

1.Preheat the oven to 375°F (191°C).
2.Mince the garlic and sprinkle it with a pinch of salt. Press the flat side of a knife over the garlic and salt mixture, dragging the knife across the mixture until the garlic becomes a paste.
3.In a large pan, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and brown for 5 minutes. Turn the chicken over and allow it to cook for an additional 2 to 3 minutes.
