Ingredients

1 medium onion , finely minced
1 ripe tomatoes , peeled and seeded , finely chopped
2 cloves garlic , mashed
3 medium potatoes , peeled and diced roughly
1/4 cup rice
1 bunch fresh cilantro , divided
1 green pepper , cut in half
2 bouillon cubes ( I use knorr beef )
1 pinch sea salt
1/2 teaspoon paprika
2 tablespoons olive oil
1 1/2 quarts water , enough to cover vegetables

Instructions

1.In a large pot, heat olive oil over medium heat.
2.Add onion, garlic, and green pepper to the pot and sauté until they are soft.
3.Add chopped tomatoes into the pot and cook for 2 minutes.
4.Add diced potatoes, rice, 3/4 of the cilantro, bouillon cubes, paprika, sea salt, and enough water to cover vegetables to the pot. Bring it to a boil and then reduce the heat to low. Simmer for 30 minutes.
5.Remove the green pepper from the pot and discard it. Use an immersion blender or transfer the soup to a blender to puree the soup until it's smooth.
6.Taste and season with salt or additional spices, if necessary.
7.Add remaining fresh cilantro and serve hot.
