1 lb black Spanish olives , drained with brine reserved
4 garlic cloves , sliced
2 dried red chilies
8 black peppercorns
1 slice lemon
4 sprigs parsley
4 fresh bay leaves
1 pinch salt
1 1/4 cups red wine vinegar

Instructions

1.Add olives to a sterilized jar.

5.Leave the jar in a cool, dark place for at least 24 hours, preferably 2 weeks before serving, shake the jar every day.
