Ingredients

1/4 lb chorizo sausage
1/4 lb ham or 1/4 lb prosciutto , cut in pieces
1 lb dried white bean
1/4 cup olive oil
3 peppercorns
1 tablespoon chopped parsley
3 garlic cloves ( pressed or finely chopped )
1 bay leaf
1/4 teaspoon thyme
2 cloves , crushed
1/2 teaspoon salt

Instructions

1.Rinse the white beans and soak them in a bowl of water overnight.

4.Drain the water from the soaked beans and add them to the pot. Add enough water to cover the beans by about an inch.
5.Add in the peppercorns, chopped parsley, bay leaf, thyme, and salt. Bring the mixture to a boil then reduce heat to low and let simmer for 2-3 hours, stirring occasionally, until the beans are tender and the stew has thickened.
6.Remove the bay leaf and serve hot with a sprinkle of fresh parsley on top.
