Ingredients

1 head romaine lettuce
2 medium tomatoes
1 small red onion
1/2 cucumber
1 avocado
1 can corn , drained
1 can tuna , drained ( I use tuna fillet in olive oil )
1/4 cup olive ( if you can find them , anchovy stuffed olives are the best ! )
extra virgin olive oil
red wine vinegar
salt and pepper

Instructions

1.Chop the romaine lettuce into bite-sized pieces and place in a large bowl.
2.Dice the tomatoes and red onion and add to the bowl.
3.Peel the cucumber, slice it in half lengthwise, and then slice into thin half-moons. Add to the bowl.
4.Cut the avocado in half, remove the pit, and slice the flesh into thin slices. Add to the bowl.
5.Add the drained corn and tuna to the bowl.
6.Add the olives to the bowl.
7.Drizzle with extra virgin olive oil and red wine vinegar.
8.Toss everything together until well combined. Add salt and pepper to taste.
