Ingredients

5 ounces green lentils or 5 ounces brown lentils
3 onions , sliced
1 garlic clove , crushed
2 cups chicken stock
2 teaspoons red wine vinegar
3/4 cup red wine
3 ounces chorizo sausage , roughly sliced
1 tablespoon parsley , chopped
2 sprigs thyme
salt and pepper

Instructions

1.Rinse the lentils in cold water and drain.
2.In a pan, fry the chorizo until brown and crisp. Remove and drain on tissue paper.
3.Fry the onions until soft and then add garlic for 1min.
4.Add lentils, chicken stock and red wine. Bring to boil, then lower heat. Simmer for about 40 minutes or until lentils are tender.
5.Stir in red wine vinegar, chorizo, parsley, thyme and seasoning. Serve hot.
