Ingredients

8 free range organic eggs ( yolks and whites separate )
4 tablespoons organic whole meal flour
4 tablespoons organic unbleached white flour
2 teaspoons baking powder
8 tablespoons Natvia
3 drops lemon juice
1 teaspoon organic vanilla essence
3 -4 slices finely diced fresh pineapple
1 cup unsweetened pineapple juice
1/2 cup rum ( optional )
1 container cream

Instructions

1.Preheat the oven to 180°C.
2.In a large mixing bowl, add the egg yolks and Natvia and whisk until creamy.
3.In a separate bowl, sift the whole meal flour, unbleached white flour, and baking powder together.
4.Add the sifted flour slowly to the egg yolk mixture, whisking continuously.
5.Add the finely diced pineapple, vanilla essence, lemon juice, and pineapple juice to the mixture and stir until well combined.
6.In a separate mixing bowl, beat the egg whites until stiff peaks form. Then, gently fold them into the mixture.
7.Pour the mixture into a 22 cm cake tin and bake for approximately 40 minutes or until a skewer inserted into the middle of the cake comes out clean.
8.Once fully cooked, let the cake cool down. Meanwhile, prepare the cream by hand whisking until light and fluffy.
9.Top the cake with the cream and serve chilled.
