1 lb salt cod fish
1 1/4 lbs floury potatoes
1 1/4 cups milk
6 spring onions , finely chopped
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1/2 lemon , juice of
2 eggs , beaten
all-purpose flour , for dusting
3 1/2 ounces dried white breadcrumbs
olive oil , for shallow frying

Instructions

1.Soak the salt cod fish in a large bowl of cold water for 24 hours, changing the water every 6-8 hours. Drain, rinse, and pat the fish dry.
2.Peel and cut the potatoes into chunks, then boil them in salted water until tender. Drain, mash, and set aside.
3.In a small pan, sauté the chopped spring onions in olive oil until soft, about 5 minutes. Set aside.
4.In a large mixing bowl, combine the soaked salt cod, mashed potatoes, spring onions, parsley, lemon juice, and beaten eggs. Mix well.
5.Gradually add the milk and all-purpose flour to the mixture, stirring constantly, until the batter is thick and smooth.
6.Cover the bowl with a cloth and let the mixture rest in the fridge for at least 1 hour.
7.In a separate bowl, mix the garlic, egg yolks, and lemon juice together.
8.Slowly drizzle in the olive oil, whisking constantly, until the mixture thickens into a smooth allioli.
9.Heat the olive oil in a large frying pan over medium heat. Using a spoon, scoop up some of the salt cod mixture and roll it into a ball. Dust the ball with flour, then roll it in breadcrumbs.
10.Shallow fry the salt cod fritters in the pan until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.
11.Serve the fritters hot with the allioli, lemon wedges, and salad leaves.
