Ingredients

2 large orange bell peppers , cut in half , seeded and membrane removed
1 large yellow bell pepper , cut in half , seeded and membrane removed
1 large red bell pepper , cut in half , seeded and membrane removed
1/3 cup olive oil ( I reduced the amount by half )
1 yellow onion , peeled and thinly sliced
2 -3 garlic cloves , finely minced
squeeze fresh lemon juice
salt , to taste
cracked black pepper , to taste
fresh Italian parsley , for garnish

Instructions

1.Preheat the oven to 400°F.
2.Coat the bell peppers with olive oil and place them on a baking sheet.
3.Roast the bell peppers for 15 minutes, until they are lightly charred.
4.Remove the baking sheet from the oven and allow the peppers to cool.
5.Peel off the skins and discard them. Cut the peppers into thin strips.
6.In a pan, sauté the onion and garlic in olive oil until the onions are translucent.
7.Add the roasted peppers, lemon juice, salt, and black pepper to the pan and toss.
8.Serve warm or at room temperature and garnish with parsley.
