Ingredients

450 g blanched almonds , toasted
225 g sugar
125 ml clear honey
50 g ground almonds
40 g icing , sugar ( confectioners , 1 1/2 oz , 1/3 cup )
15 g tbsps sugar
1 egg yolk
1 dash almond essence ( extract )
Turon is a traditional Spanish dessert made with marzipan and toasted almonds, sweetened with sugar and honey and flavoured with almond extract. It is a popular treat during festivals and celebrations, and is often served with coffee or tea. The word 'turon' comes from the Arabic word 'turun', which means 'to wrap'. It is a delicious dessert that is both sweet and nutty, with a chewy and slightly crunchy texture.

Instructions

1.Preheat oven to 180°C (fan)/200°C/gas 6.
2.In a heavy-based pan, gently heat the sugar and honey until melted, stirring occasionally until the sugar has dissolved. Increase the heat and let the mixture bubble for 4-5 minutes until pale caramel in colour.
3.Remove from the heat, and stir in the nuts, ground almonds and almond extract until well combined. Chill for 10 minutes to firm up.
4.Sprinkle the work surface with icing sugar and roll out the marzipan to a thickness of about 5mm. Trim to a rectangle measuring approximately 35x20cm. Cut into 12 equal pieces.
5.Beat the egg yolk with a splash of water. Brush each piece of marzipan with the yolk mixture and place about a tablespoonful of the nut mixture on top, leaving a 5mm border around the edge. Roll up the marzipan tightly, tucking in the edges. Brush each roll with the remaining egg wash and sprinkle with caster sugar.
6.Place the rolls on a baking sheet lined with baking parchment. Bake for 15-20 minutes until lightly browned. Leave to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
