Ingredients

14 ounces spinach leaves
3 tablespoons olive oil
1 large onion , finely sliced
2 large potatoes , peeled and finely sliced
10 eggs

Instructions

1.Preheat the grill to high.
2.Steam the spinach until wilted and then squeeze out any excess water and roughly chop.
3.Heat the oil in a large non-stick frying pan and cook the onion and potatoes for 20 minutes or until soft and lightly golden.
4.In a bowl, beat the eggs together and then add the cooked onion and potatoes and chopped spinach, season with salt and pepper.
5.Pour the egg mixture back into the frying pan and cook over a medium heat for 10-12 minutes or until almost set.
6.Place the frying pan under the grill to finish cooking the top of the omelette, for 5-7 minutes.
7.Serve hot or cold, cut into wedges.
