Ingredients

1 lb boneless skinless chicken , cut into 1-inch strips
1 medium onion ( quartered )
2 green peppers ( chopped )
1 jalapeno pepper ( seeded and chopped )
3 garlic cloves ( minced )
2 teaspoons coriander
2 cups chicken stock
1 can crushed and drained canned tomatoes
1 teaspoon ground cumin
2 teaspoons chili powder
3/4 cup long grain brown rice
1 dash cayenne pepper
1 cup green peas ( fresh or frozen )
1 teaspoon sazon goya or 1 teaspoon any other seasoning salt

Instructions

1.In a large pot, heat oil over medium heat. Add chicken strips and cook for 10 minutes or until browned on all sides.
2.Add onions, green peppers, jalapeno pepper, and garlic to the pot. Cook for another 5 minutes or until vegetables are softened.
3.Sprinkle coriander, cumin, chili powder, and cayenne pepper over the mixture. Stir to coat everything in the spices.
4.Add chicken stock and canned tomatoes to the pot and stir to combine. Bring mixture to a boil.
5.Reduce heat down to low and add brown rice to the pot. Cover and simmer for 45 minutes or until rice is cooked through.
6.Add green peas and seasoning salt to the pot. Cook for another 5 to 10 minutes or until peas are warmed through.
