Ingredients

200 g margarine or 200 g butter
1/4 liter sugar
2 eggs
1/4 liter wheat flour
1 teaspoon baking powder
1 teaspoon ground cardamom
1/4 liter sweet bread crumbs ( e.g . crumbled biscuits )
1/4 liter ground almonds ( appr . 80 g )
1/8 liter single cream
raspberry jam
1/4 liter water
1/8 liter sugar
2 -3 tablespoons arrack liqueur or 2 -3 tablespoons rum
raspberry jam or raspberry marmalade
1/8 liter icing sugar
2 teaspoons water or 2 teaspoons lemon juice
Runeberg's muffins are a traditional Finnish pastry named after the famous Finnish poet Johan Ludvig Runeberg, who was known to enjoy them with a glass of punsch liqueur. These muffins are typically enjoyed in Finland during the period leading up to Runeberg's birthday on February 5th, but they can be enjoyed anytime. They are sweet and moist, and have a unique flavor, thanks to the addition of ground almonds and cardamom. Topped with raspberry jam and a sweet sugar syrup, these muffins are a delight to eat and make for a perfect snack or dessert.

Instructions

1.In a bowl, beat the margarine (or butter) together with sugar until light and fluffy.
2.Add in the eggs, one at a time, continuing to beat the mixture until combined well.
3.Next, add in the wheat flour, baking powder, and ground cardamom, and mix well.
4.Add in the sweet bread crumbs (crumbled biscuits), ground almonds, and single cream, and mix until a thick batter forms.
5.Grease 12 muffin cups or molds with some margarine.
6.Fill each cup or mold about 2/3 full with the batter.
7.Use your thumb to make an indentation in the center of each batter-filled cup or mold.
8.Fill each indentation with 1/2 to 1 teaspoon of raspberry jam.
9.Bake the muffins in a preheated oven at 200°C (400°F) for 18-20 minutes, or until the muffins have a golden-brown color and are lightly springy to the touch.
10.While the muffins are baking, prepare the sugar syrup by mixing the water, sugar, and arrack liqueur or rum together in a small saucepan over low heat.
11.Once the sugar has dissolved, increase the heat to high, bring the mixture to a boil, and allow it to cook for 2-3 minutes.
12.Remove the syrup from the heat.
13.Once the muffins have finished baking, remove them from the oven, and while they are still hot, brush them generously with the sugar syrup using a kitchen brush.
14.Allow the muffins to cool in the tin for a few minutes before removing them and placing them on a wire rack to cool completely.
15.Once the muffins have cooled, mix the icing sugar and water (or lemon juice) together in a small bowl to make a runny icing.
16.Drizzle the icing on top of each muffin, letting it drip down the edges.
17.Top each muffin with a small dollop of raspberry jam or raspberry marmalade, and enjoy!
