Ingredients

1 1/2 lbs almond paste
2 1/4 cups powdered sugar
3 large egg whites
Kransekake, or 'wreath cake' is a traditional Norwegian cake that is typically served during festive occasions such as weddings, baptisms and Christmas. Many families have their own recipe or adaptation of it. A Kransekake is made by forming dough into interlocking rings that are baked, piled up high, and sweetened with a light glaze. Its unique taste and beautiful presentation make it an ideal centerpiece at any celebration. The Scandia Kransekake-kransakake or Rings Cake is a variation of the Norwegian recipe, where the dough is replaced by almond paste. This results in a cake that is extra soft, chewy and gluten-free.

Instructions

1.Preheat oven to 340°F (170° C).
2.Combine the almond paste, powdered sugar, and egg whites until it becomes a smooth paste.
3.Divide the paste into 18 parts and roll them out into long ropes.
4.Place the strips in a ring on a baking sheet, starting with the largest and working toward the smallest, leaving gaps in between.
5.Using a pastry brush, lightly brush the top of the ring with egg whites.
6.Bake in the preheated oven for about 15 minutes, or until lightly golden brown. Keep an eye on it as it can easily burn.
7.Allow it to cool before serving.
