Ingredients

1/2 lb ground sirloin
1/2 lb ground veal
1/2 lb ground pork
2 tablespoons honey
1 large egg
3 tablespoons unsalted butter
kosher salt & fresh ground pepper
1 cup chicken stock , prefereably homemade and salt-free
1/2 cup heavy cream
1/4 cup lingonberry preserves
2 tablespoons juice , from quick pickled cucumbers

Instructions

1.In a medium bowl, mix together breadcrumbs and cream.
2.In a large skillet, heat olive oil over medium heat.
3.Cook onion for about 5 minutes or until soft, but not brown.
4.In a large bowl, combine sirloin, veal, pork, honey, egg, cooked onions, salt, and pepper.
5.Mix until well combined.
6.With wet hands, shape the mixture into 1 1/2-inch meatballs.
7.In the same skillet used to cook onions, melt butter until foamy.
8.Add meatballs and cook until well browned on all sides.
9.Transfer meatballs to a plate.
10.In the same skillet, pour in chicken stock, cream, and lingonberry preserves.
11.Reduce heat to low and stir until sauce is smooth.
12.Add meatballs back into the skillet and simmer for about 5 more minutes.
13.Serve with juice from your quick pickled cucumbers on top of the meatballs.
