Instructions

1.In a large mixing bowl, beat eggs and milk until well combined.
2.Add the nutmeg, salt, and flour, mixture until a smooth batter is formed.
3.Allow the batter to rest for 30 minutes, covered.
4.Bring a large pot of salted water to a boil.
5.Transfer the batter to the spaetzle maker, and press the batter through the holes, dropping it directly into the boiling water.
6.Allow the spaetzle to cook until it floats to the surface, approximately 2-3 minutes.
7.Drain the spaetzle and set aside.
8.In a large skillet, melt the butter over medium heat.
9.Add the sage leaves and diced onion, cook until the onion is translucent, approximately 5 minutes.
10.Add the spaetzle to the skillet, tossing it gently with the onion and sage butter sauce until well coated.
