Instructions

1.Combine minced onion, meyer lemon zest, meyer lemon juice and extra virgin olive oil in a bowl.

4.Add in the baby spinach and shaved fennel and stir to combine.

8.Cook the egg for about 3-4 minutes, or until the white has set and the yolk is still runny.

10.Repeat this process until all the eggs are cooked.
11.Place two rolls of smoked salmon on each plate and then top with the potato and spinach salad.
