4 quarts milk
1/2 pint sour cream
1/2 rennet tablet

Instructions

1.In a large pot, heat the milk to 86°F.
2.Add in the sour cream and rennet tablet, stirring gently for 1-2 minutes.
3.Cover the pot and let the mixture sit for 12-16 hours at room temperature until the mixture sets.
4.Line a colander with cheesecloth and pour the mixture into the colander to allow the whey to drain.
5.Once drained, your Skyr is ready to be served!
