Ingredients

2 eggs
1 cup brown sugar
7 tablespoons soft butter , , creamed
3 tablespoons almonds , slivered
3 cups flour
1 teaspoon baking powder

Almond rusks, or Mandelskorpor in Swedish, are a popular Swedish biscuit that are traditionally enjoyed at fika, a coffee break in the mid-morning or mid-afternoon. Instructions

1.Preheat oven to 180°C. Grease two baking sheets.
2.Beat together eggs and sugar in a large bowl using an electric mixer until the mixture is light and fluffy.
3.Cream the soft butter and mix in with the eggs and sugar.
4.Mix the almonds, flour, baking powder and salt in a separate bowl.
5.Slowly add the dry almond flour mixture to the wet mixture and beat until just combined.
6.Shape dough into two long logs and place on the baking sheets.
7.Bake for 25 minutes.
8.Reduce oven to 150°C. Cut the logs into slices and bake another 10 minutes, until crispy brown.
