1 tablespoon extra virgin olive oil
1 small onion , thinly sliced
1 garlic clove , thinly sliced
1 lb sauerkraut , drained and rinsed
1 sweet apple , peeled , and grated ( optional )
generous pinch allspice
salt
fresh ground black pepper
1/4 cup mayonnaise
1 tablespoon chili sauce ( or ketchup or try Thai chili sauce for a kick )
1 dash hot sauce
1 tablespoon fresh chives , minced
1 tablespoon fresh dill , minced ( optional )
2 teaspoons capers , chopped
1 teaspoon fresh lemon juice
1 tablespoon extra virgin olive oil ( optional )
12 slices tempeh bacon ( you can leave this out or use veggie bacon , tofu bacon , seitan or wham=vegetarian ham )
1 -2 tablespoon unsalted butter , softened
8 slices rye bread ( or pumpernickel bread )
12 slices dill pickles
2 cups grated swiss cheese
kosher salt
fresh ground black pepper

Instructions

2.Add drained and rinsed sauerkraut, a grated sweet apple (optional), allspice, salt, and black pepper. Cook for another 5-6 minutes or until the sauerkraut is heated through.
3.In a small bowl, make the sauce by combining mayonnaise, chili sauce (or ketchup), hot sauce, minced chives, minced dill (optional), chopped capers, and lemon juice. Mix well and set aside.
4.In another skillet, cook the tempeh bacon slices until golden brown over medium heat. Set aside.
5.Spread unsalted butter on one side of each bread slice. Then, on the other side, spread the sauce prepared in step 3.
6.Add cooked tempeh bacon slices, dill pickles, and grated swiss cheese on one slice of bread. Top it with another bread slice, butter side out.
7.Grill the sandwich over medium heat until it's golden brown and the cheese is melted. It takes around 3-4 minutes to cook each side.
8.The Vegetarian Reuben Sandwich (Virgin Reuben) is ready to serve now. Cut it into halves and enjoy it hot with your favorite sauce.
