Ingredients

1 tablespoon active dry yeast
1 tablespoon dark brown sugar ( I used muscovado )
1/2 cup water , tepid
1 1/4 cups milk
1/8 cup molasses
3 1/2 cups rye flour
2 cups spelt flour
1/2 cup brown rice flour
2 tablespoons oat bran
1/2 teaspoon salt
3 tablespoons linseeds
4 tablespoons oatmeal , coarse

Instructions

1.In a large mixing bowl, dissolve the yeast and brown sugar in 1/2 cup of tepid water.
2.Stir in the milk, molasses, rye flour, spelt flour, brown rice flour, oat bran, and salt until evenly combined.
3.Stir in the linseeds and oatmeal.
4.Knead the dough on a floured surface for 10-15 minutes, or until smooth and elastic.
5.Place the dough in a greased bowl and cover with a damp cloth. Let it rise in a warm, draft-free place for about 2 hours, or until doubled in size.
6.Preheat the oven to 375°F. Grease a loaf pan.
7.Punch down the dough and shape it into a loaf. Place it in the prepared pan and let it rise again for about 30 minutes, or until the dough rises slightly above the rim of the pan.
8.Bake for 45-50 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom. Cool on a wire rack before serving.
