Ingredients

5 lbs red potatoes
1 large onion , diced
1 cup vinegar
1 1/2 cups sugar
salt and pepper
3 lbs diced bacon , raw
1 pint half-and-half

Instructions

1.Slice the potatoes and put them in a large pot of salted water.
2.Bring the water to a boil and cook the potatoes until they are tender, about 15-20 minutes.
3.Drain the potatoes and let them cool down.
4.In a separate pan, cook the bacon until it becomes crispy and set aside.
5.Add the diced onion to the bacon fat and cook until it becomes translucent.
6.Add the sugar, vinegar, salt, and pepper to the onion and bacon fat, stir well and let it simmer for around 5-7 minutes.
7.Pour the vinegar mixture over the potatoes and bacon and stir until coated.
8.Stir in the half-and-half and serve warm or at room temperature.
