German yeast dumplings Hefeklosse, also known as Germknödel or Dampfnudeln, are traditional German dumplings made from yeast dough. They're a popular treat in German-speaking countries, especially during the winter months, where they're often served as a dessert or served with savory ingredients like sauerkraut or mushroom sauce. This sweet version is typically served with vanilla custard or fruit compote and is perfect for a casual dinner or cozy family gathering. The texture is fluffy, light, and pillowy, with a subtle sweetness that makes it a true comfort food.

Instructions

1.In a large mixing bowl, dissolve the yeast in warm water. Let it stand for five minutes.
2.Whisk in egg, melted butter, lukewarm milk, salt, and nutmeg (if using). Stir in flour, adding 1 cup at a time until the dough comes together in a ball.
3.Knead the dough for five minutes or until it becomes smooth and elastic. Cover the bowl with a clean kitchen towel and let it rise in a warm place for 30 minutes or until it doubles in size.
4.Gently punch down the dough and shape it into 10 to 12 dumplings. Let the dumplings rise for 10 more minutes.
5.In a large pot, bring water to a boil. Add 1 tsp of softened butter and salt to the water. Carefully place dumplings into the boiling water and reduce heat to medium-low. Cover with a lid and cook for about 25-30 minutes until they become light and fluffy.
6.Remove the dumplings with a slotted spoon, place them onto a plate, and serve them warm with your favorite sauce or fruit compote.
