Ingredients

3 lbs round steaks

2 onions , sliced
1 carrot , sliced
1 stalk celery , chopped
4 cloves
4 peppercorns
1/2 pint red wine vinegar
2 bay leaves
2 tablespoons vegetable oil ( or kidney fat )
6 tablespoons butter
3 tablespoons flour
1 tablespoon sugar
5 gingersnaps , crushed

Instructions

1.Tie the round steak with a string, and season it with salt and pepper.
2.In a large bowl, combine the onions, carrots, celery, cloves, peppercorns, red wine vinegar, bay leaves, and enough water to cover the meat.
3.Add the meat to the bowl and marinate for at least three days, turning it once or twice a day.
4.Remove the meat and drain the marinade, reserving it for later. Pat the meat dry with paper towels.
5.In a large Dutch oven, heat the oil or kidney fat, and brown the meat on all sides.
6.Add the marinade to the pot and bring it to a boil. Reduce heat, cover, and simmer the meat until tender (about three hours).
7.Remove the meat and keep it warm.
8.In a separate saucepan, melt the butter and stir in the flour until smooth.
9.Gradually add the reserved marinade, sugar, and gingersnap crumbs, stirring constantly until the sauce thickens.
10.Remove the strings from the meat, slice it thinly and serve with the gravy and potato dumplings.
