white cabbage

1 lb minced beef ( or turkey )

1 beaten egg
lard
1 carrot , sliced
1 onion , sliced
1 garlic clove , sliced
1 stalk celery , sliced
2 cups meat stock or 2 cups beef broth
cornstarch
cream cheese
Stuffed Cabbage Charlemagne (Krauterroulade Karl Der Grosse) is a German dish that originated in the 9th century, during the reign of Charlemagne, and is believed to have been one of his favorite meals. It is essentially a cabbage roll filled with a mixture of ground pork, minced beef, and spices that is cooked in a rich broth until perfectly tender. The dish gets its name from the Frankish king Karl der Grosse, who was also known as Charlemagne. It is a classic dish that is still popular today, particularly during the winter months when hearty, warming meals are preferred.

Instructions

1.Preheat the oven to 325°F.
2.Remove the core from the cabbage and start to carefully peel the outer leaves off.
3.Blanch the cabbage leaves in boiling salt water for around 3 minutes then drain them and dry them with a cloth.
4.Season the ground pork and minced beef with salt, pepper and nutmeg.
5.Add the chopped onion, boiled bacon, parsley, chives, dill and beaten egg to the meat mixture. Mix until thoroughly combined.
6.Place the cabbage leaves flat and put around 2 tablespoons of the meat mixture onto each leaf making sure the meat is spread all over the cabbage leaf.
7.Roll the cabbage leaves, tuck in the sides, and put them seam side down into the roasting pan.
8.Spread the lard on top of the cabbage rolls and spread carrot, onion, celery and garlic around the cabbage rolls in the pan.
9.Add the meat stock or beef broth and sprinkle caraway seed over the pan.
10.Put the roasting pan in the oven and cook for around 2 hours.
11.Once cooked, transfer the cabbage rolls to a plate using a slotted spoon and pour the sauce into a saucepan. Whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce. Once heated up and thickened, add the cream cheese to the sauce and bid until it has been fully integrated.
12.Pour the sauce over the cabbage rolls and serve them hot.
