Ingredients

2 tablespoons olive oil
1 beef eye round

4 cups beef stock or 4 cups broth
2 cups red wine
2 bay leaves
7 tablespoons lightly-salted butter , divided
6 medium carrots , diced
6 medium celery ribs , diced
2 medium onions , diced
6 tablespoons all-purpose flour

Instructions

1.Preheat oven to 325°F.

6.Transfer eye of round to a cutting board and let rest for 10 minutes.
7.In a skillet, melt remaining 4 tablespoons of butter over medium-high heat. Add flour and whisk for 1 minute.
8.Slowly pour in cooking liquid from the Dutch oven, whisking constantly to avoid lumps.
9.Reduce heat to low and simmer for 10 minutes.
10.Slice eye of round and serve with sauce.
