Ingredients

150 ml rice cream ( soy might also work , but I have not tried that , if non-vegan just use regular cream )
250 g bittersweet chocolate , broken into pieces ( make sure its vegan )
1 banana , sliced
100 g vegan cookies ( I used digestives )

Instructions

1.In a saucepan, heat the rice cream over medium heat until it just begins to boil. Remove from heat.
2.Add the broken bittersweet chocolate pieces to the hot rice cream and whisk until the chocolate is melted and smooth.
3.In a loaf pan, layer the sliced banana and vegan cookies.
4.Pour the melted chocolate mixture over the bananas and cookies, smoothing into an even layer.
5.Cover and refrigerate for at least 2 hours or until solidified.
6.Once solidified, unmold and cut into slices.
