Ingredients

2 quarts warm water
3 cups nonfat dry milk powder
1/2 cup buttermilk or 1/2 cup yogurt
1/4 rennin tablets ( or 3 drops liquid rennet )
1/3 cup raisins
1/4 cup white wine
3 eggs , separated
6 tablespoons butter , at room temperature
1/2 cup sugar
3 tablespoons flour
1 cup sour cream
1/4 teaspoon cream of tartar
1 pinch salt
4 fresh apricots , sliced
1 lb phyllo dough
1/4 cup butter , melted

Instructions

1.Preheat your oven to 350°F (175°C).
2.To make the quark mixture, mix the warm water and the nonfat dry milk powder in a bowl. Add the buttermilk and stir. Crush the rennin tablets in a separate bowl, add a teaspoon of cold water and stir well.
3.Add one teaspoon of the rennin solution to the quark mixture, stir and cover with a cloth.
4.Add the raisins to white wine and let it soak for an hour.
5.Beat the egg yolks and butter until foamy, add the sugar and beat until the mixture is light and fluffy. Add the flour and beat until just combined. Add the sour cream and mix well. Stir in the raisin mixture.
6.Beat the egg whites, cream of tartar and salt in a bowl until stiff peaks form. Fold this mixture into the quark mixture until just combined.
7.On a floured board, roll out one sheet of phyllo dough and brush it with melted butter. Fold it into a square, brush with butter again and put it in an ovenproof dish. Repeat until you have a base of at least four layers of phyllo dough.
8.Pour the quark mixture over the phyllo base and smooth it out to form an even layer. Top with the slices of apricots and sprinkle with some brown sugar.
9.Bake the quarkcake for 30-45 minutes or until the top is golden brown.
