Ingredients

5 1/2 cups bread flour ( divided , you may not need all of the flour )
1/4 ounce dry yeast ( approx 2 1/2 tsp )
1 tablespoon sugar
1 1/2 teaspoons salt
1 1/2 cups warm water
1 teaspoon malt extract or 1 teaspoon unsulphered molasses
1 egg
1 egg white
1 tablespoon shortening
cornmeal , for dusting

Instructions

1.In a large bowl, mix together 2 cups of flour, yeast, sugar, and salt.
2.Add warm water, malt extract or molasses, egg, egg white, and shortening. Beat for 2 minutes with mixer or by hand.
3.Slowly add the rest of the flour and mix until the dough is smooth.
4.Knead the dough for a few minutes and shape it into a ball. Place it in a greased bowl, cover, and let it rise until it doubles in size.
5.Punch down the dough and divide it into 16 pieces.
6.Shape them into balls and place them 2 inches apart on a greased baking sheet, sprinkle cornmeal over them, cover, and let it rise for 30 minutes.
7.Preheat oven at 450 F for 10 minutes then reduce it to 375 F, bake the rolls for 20-25 minutes.
