1 tablespoon cinnamon sugar ( equal parts each )
salt & fresh ground pepper ( to taste )

Instructions

1.Preheat oven to 350 F.
2.In a medium bowl, whisk together evaporated milk, egg yolks, and lemon rind.
3.Dip each slice of bread into the milk mixture, making sure it is well coated.
4.In a separate bowl, mix together the breadcrumb, cinnamon sugar, salt, and pepper.
5.Dip each slice of bread into the breadcrumb mixture until coated.

8.In a separate bowl, beat egg whites until frothy.
