Ingredients

1 1/2 cups all-purpose flour
1/3 ounce compressed yeast
1/4 cup milk
3 tablespoons unsalted butter
2 eggs
1/2 teaspoon orange zest
1/4 teaspoon salt

1 bottle of a german riesling wine , of spatlese quality
2 fresh oranges , juice of
1 teaspoon cornstarch
3 tablespoons honey
1/2 lb whole raw almonds
1 cup 35 % cream
24 dried figs ( about 1 lb )
5 tablespoons honey
4 cloves

Instructions

1.In a large mixing bowl combine flour, yeast, milk, and butter. Mix until dough forms.
2.Add eggs, orange zest, salt, and sugar. Mix well.
3.Now add Riesling and orange juice to the dough, and mix again.
4.Let the dough rest for 5-10 minutes and then add cornstarch and honey. Mix well and then add almonds.
5.Preheat oven to 375°F. Grease a Savarin mold with butter and flour, pour the dough into it and bake for 35-40 minutes, until golden brown. Let cool in the pan.
6.To make the fig compote, combine figs, honey, and cloves in a saucepan. Cook for 10-15 minutes or until the figs soften. Remove from heat and let cool.
7.To serve, whip the cream and top each slice of Savarin with whipped cream and fig compote.
