Ingredients

1/2 lb cake flour
2 1/2 ounces sugar
1/4 lb margarine
1 egg
1 teaspoon vanilla
1 teaspoon baking powder
2 lbs tart apples
3 cups red wine
7 ounces sugar
2 packages vanilla pudding mix ( unsweetened )
This classic tart recipe is given a twist with the addition of red wine to the apple filling, making it a perfect centrepiece for a dinner party dessert table. The combination of the rich, warm flavours of the wine with the sweet and tart apples is the perfect balance. Although it takes a little extra time to prepare, it is well worth the effort.

Instructions

1.Preheat the oven to 375°F.
2.In a bowl, mix the flour, sugar, margarine, egg, vanilla and baking powder until a dough forms.
3.Roll out the dough and transfer it to a 9-inch tart pan, making sure to press it against the edges and bottom.
4.Peel and core the apples, then slice them thinly and arrange them in the tart shell.
5.In a medium saucepan, combine the red wine and sugar. Bring to a boil, then reduce heat and simmer until the sugar dissolves.
6.Whisk in the vanilla pudding mix and bring to a boil again, then remove from heat.
7.Pour the pudding mixture over the apples, making sure all are covered.
8.Bake for 45-50 mins, or until the tart is golden brown.
