Ingredients

2 whole boneless skinless chicken breasts , halved ( about 1 pound each )
4 slices Westphalian ham ( thin slices ) or 4 slices black forest ham ( thin slices )
4 slices gruyere ( thin slices ) or 4 slices emmenthaler cheese ( thin slices )
1 medium garlic clove , very finely chopped
1/4 1/4 teaspoon marjoram or 1/4 teaspoon sage
fresh ground white pepper
1/3 cup dry white wine
1/3 cup chicken broth
watercress or parsley sprig
German Chicken, Ham, and Cheese Roulades are a classic gourmet meat dish dating back to medieval times. The dish is known in Germany as 'Hühnerrouladen' and is made by rolling chicken breasts around ham and cheese. Traditional German recipes use Riesling wine to cook the chicken, but this version calls for dry white wine to reduce the sauce. Instructions

1.Preheat the oven to 350°F.
2.Flatten each chicken breast half to an even thickness of about 1/2 inch.
3.Put 1 ham slice and 1 cheese slice on each chicken breast half. Sprinkle with salt, garlic, marjoram or sage, and white pepper. Roll up the chicken, tucking in the ends to make neat packages. Secure each roulade with a toothpick.
4.Heat a large nonstick skillet over medium-high heat and coat with cooking spray. Add the roulades and brown them, turning occasionally, for 6 minutes.
5.Transfer the skillet with the roulades to the preheated oven and bake for 15-20 minutes until the chicken is cooked through.
6.Remove the roulades from the pan and let them rest on a plate covered with aluminum foil for 5 minutes. Meanwhile, add the wine and chicken broth to the hot skillet, stirring to scrape up any browned bits. Boil the sauce for about 1-2 minutes or until it reduces slightly.
7.Slice each roulade into 6-8 even slices, remove the toothpicks and drizzle with the pan sauce. Garnish with watercress or parsley sprigs.
